What is a Hatch Chiles you ask? These chiles are named after the original growing area in Hatch, New Mexico. The best of these chiles are grown in the Mesilla Valley, just north of Las Cruces. The intense sunlight and cool nights in this valley result in a uniquely flavored chile. Hatch Chiles have a meaty flesh and come in mild to hot heat

Hatch chiles are best when roasted and many folks buy a case of hatch chiles, have them roasted at the store and then freeze them until ready to eat. The chile is extremely versatile in cooking. I even use them raw in my recipes.

  2. We have super markets here in Arizona targeted for Hispanic People and the have this kind of roasters.

    I do buy those roasted peppers there.

  3. I have never tried hatch roasted chile’s (is that the correct way to call them) but they look really delicious! I bet they would go perfectly with a bbq!
